Sabatier Breswick Chef Au Ritz 9.5" Ideal Pattern Chef Carbon Steel 1950s 60s

Sabatier Breswick Chef au Ritz chef knife with 9.5" hand-forged after drop-forged hand ground carbon steel blade and brass riveted POM handle. The handle and blade have the Chef au Ritz logo with a cartoon portrait of Escoffier; the markings on the blade are partially lost, but read "Veritable Sabatier Breswick Paris Chef Au Ritz.

This knife was originally 10" and had been sharpened in a bit, leaving a deep curve in the heel from sub-par sharpening. We have reshaped the edge and thinned the faces, adding a gently convex grind to the blade, bringing it back closer to its originally hand-ground geometry. There are some cracks on the POM handle, but this is par for the course, it seems, for French knives of this era; the handles are always very stable if the cracks are not on the very end of the handle at the third rivet. These cracks are all between the second and third.
