Refurbished carbon steel chef knife from the Edward Weck company of New York. Weck was a German immegrant to set up shop in New York mostly dealing and making razors, they also sold other OEM knives like this one.
Originally a larger knife this has been shortened to 6.5" which actually better suits the smaller handle, (older knives often have smaller handles)
This knife has been re-profiled and thinned, it's tip was bent and the edge sharpened in. There was this great knife hiding inside luckily. It has a fresh edge and is ready to get back to work.
