Shred the gnarliest pasta guitar (or Chitarra) with this puppy on two different sides and modalities- Spaghetti (3mm) OR Tagliatelle (6mm). Handmade pasta has never been heavier.
Lore has it that this tool and particular pasta shapes were born in Abruzzo, smack dab in the center of Italy. However, nowadays it's widely used and known across the entire country. Spaghetti and Tagliatelle are just two types/ shapes, but of course there are others that are similar that go by other names and varying shapes depending on the region.
Once the dough is worked and rested, roll out a sheet that's a couple of millimeters thicc. Then you're ready to place your sheet on the pasta guitar! Move a rolling pin over the sheet and violá-- you've got beautifully cut, even strips.
For cleaning and maintenance, hand-wash with mild soap an water, hand-dry, and ensure it is stored dry. Wood will not tolerate prolonged soaking.
