Windmühlenmesser Series 1922 4.5" Office Knife Carbon Walnut Handle

Traditionally used in the prep room off the kitchen, this robust paring knife can be used for any and all food prepping purposes. Carbon steel with walnut handle.

These knives were made to commemorate the 140th year anniversary at Windmuehlenmesser and are identical to the original craftsmanship in 1922; the 'Golden Times'. These knives are die-forged with a small, classic bolster, dry fine-ground, and blue glazed by hand. Made with high-grade carbon steel, they have a hardness of 60 HRC and are handled with walnut wood, hand-shaped and sanded. Comes with a small bottle of Holzpflege-oil for maintenance.

Robert Herder Windmühlenmesser knives are made in Solingen, Germany, and still utilize old hand-work techniques. Their fine, hand-ground blades are extremely light and ground thin- they offer a great cutting feel that is not possible with chunky, mechanized-ground blades. Paired with a slight convexity, it makes for reduced friction and sticking during cutting.

Windmühlenmesser has worked hard to establish an extensive apprenticeship program at their workshop. There, craftspeople work to preserve old techniques that have nearly disappeared from Solingen.
