
Draco 11.75" Round Nose Slicer Carbon Steel Wenge -Spain
As much as Spain figures in as an important European center of forging very little vintage culinary knives from there turn up. I do not have much information to go off and little reference for how to best date Spanish culinary knives from the materials. The rosette style brass rivets on a French knife would suggest early 60's as the most recent and that might be the case with this one.
This is not a flexible knife, it has some stiffness and weight leading it to be a better roast slicer than salmon or ham knife.
No thinning on this one, it does have a fresh edge.
