
Unmarked 7" Chef Sweden Cuisine Massive / Nogent Style 1930s-60s
Vintage 7" Swedish chef knife with hand forged after drop forged carbon steel blade, nickel ferrule and ebony handle. This knife was almost certainly made under the Jernbolaget brand in Eskilstuna Sweden (Sweden's Sheffield / Solingen / Thiers).
The blade had been sharpened in just enough to make it a little thick so it has been re-ground along it's faces to thin it back to its original geometry; nice and thin for super fine cutting. It had picked up a little rust over the decades as well leaving some fine pits, most had been ground away but there are a few still visible. The handle is nice and secure but has a crack at the heel.
Swedish knives like this don't show up all that often and I am a big fan of their geometry and cutting feel, obviously this design is very French influenced but the Swedish design here is very much a unique personality.
