Tadafusa Aogami #2 nashiiji knives are forged with a softer stainless cladding and a hard carbon steel center. They are forged with wide, kireba primary bevels which allows for easy thinning down the road. Aogami #2, or blue #2, is a steel made by Hitachi that is formulated to retain long edge life. Aogami #2 has the lowest carbon content and shortest edge life of the Aogami steels. Despite this, Aogami #2 does have a longer cutting duration compared to most other steels.
