Trade in gyuto in good condition without original packaging but with saya. This stainless steel knife came in seeing a good amount of use but it was well cared for throughout. We have refurbished the thinness of the edge a bit to regain some original cutting feel but there is still a ton of use left. The FJ series has some of the best treatment of VG10 steel that we have come across and it will make this a fantastic workhorse knife for a professional kitchen.
