Handmade by Silverthorn Knife & Tool. The Silverthorn chef is a deep bellied chef with good amount of flat spot in the heel and a little bit of flat spot in the tip behind the kiritsuke style tip. 

XHP semi stainless made in the US by Carpenter steel is easy to sharpen for a steel with a fair degree of wear resistance but does have good edge retention, it is not super tough so it is not suitable for hacking or abusive applications, XHP doesn't have particularly high corrosion resistance either, expect it to patina or get pepperspots.
