Misono EU carbon steel knives are made from a high-carbon, pure Swedish carbon steel that is forged and hand-ground. While they look like many other Western-handled Japanese knives the high level of quality sets them apart. 

After sharpening countless of these over the decades, we are proud to offer them here in the shop. The thin, convex ground blades have great edge retention, are easy to sharpen, and can work with a wide variety of finishes, allowing the user to dial in their preferred working edge.
