Masakane Vintage 240mm Kanto Gyuto Carbon Steel Rosewood 1960s
Used vintage Masakane 240mm gyuto with one piece rosewood handle riveted in 1/2 brids eye brass rivets. Blade has been cleaned and sharpened at 80/20 right hand bias.
Blade has been sharpened in a little but this was a narrow gyuto to start out with, made long before gyuto began to be used outside of Japan. This would have been a less expensive model back in it’s day but it is still a great quality single steel knife. Masakane was synonymous with gyuto up through the 80’s, the company went out of business in the 90’s after a very long successful run, they were a very important maker of gyuto.
237mm cutting edge, 39mm wide at heel, 357mm overall length 113.6 grams
