Refurbished 10" Ideal pattern chef knife made in France (most likely Thiers) in the 1960s or 70s with carbon steel blade, walnut or fruitwood handle and brass rivets.
This is a nice quality hand forged after drop forged blade that had been sharpened in a bit and required a thinning, it has been refurbished and is ready to get to work. The handle has some cracks which might need replacing at some point in the not too terribly distant future, but this knife has lots of life left in it.
