Flexible narrow ham knife made by K Sabatier Jeune in Thiers France, likely in the 1960s. Blade marks are gone but the tell-tale grape bunch stamp is still peeking through on handle.
An offshoot of K Sabatier (est 1834) K Sabatier Jeune was an offshoot started as the result of a family dispute when two brothers owned K Sabatier and the younger brother went and made his own brand which made excellent quality knives.
