Lightly used trade in Jikko 270mm Gyuto. Iron Clad Aogami 2 core blade with suminagashi damascus kasumi finish. Octagon ebony / Nickel / Micarta handle with water buffalo horn ferrule.
With Saya no box, barely used but is should be noted there is a small separation at the second horn ferrule at the butt of the handle
Jikko's aogami kasumi series are forged and ground by top level craftsmen in Sakai, Osaka. This series has a nice weights and a thin grind behind the edge, sharpen easily, and cut beautifully. Superb finish work on these knives, they have a lustrous kasumi finish and polished spine. This is top shelf work and we are very proud to stock these. It should be noted that the nickel spacers edges can be felt along with the handle.
Jikko is a family business established in 1901 in Sakai City, Osaka and has cultivated extensive relationships with traditional craftsman in Sakai. From basic to top shelf, Jikko maintains a high standard of quality control. Wonderful in house sharpening is done on all of their single bevel knives, and special care is taken to provide a flat, fine-polished ura (side opposite omote bevel)
