‘Emouleur Thiernois’ “Thiers grinder” chef knife in next to new condition. Purchased in Europe as new old stock and used several times it is in excellent condition.
This knife is of the classic post war drop forged-hand forged-hand ground variety typified but the internal round bolster (riffing off the older separate round ferrule). It is light, springy and fine behind the edge without any flex in the first half of the blade.
The original printed mark of the grinder working on his stomach is on the blade.
