In Japan, camellia oil is used for carbon steel knives to protect from rust. It is a food grade oil made from the camellia flower that won't get tacky as it dries, resists rancidity, and wipes off easily even after long storage. Highly recommended for any carbon steel knife that will get oiled often. Works nicely on traditional magnolia wood handles and sayas too!
