Abercrombie & Fitch Sabatier Ideal pattern salmon / ham knife (possibly made by Sabatier Trumpet judging from the from the model number?). Hand forged and hand ground after drop forged stainless steel 12" blade with nickel silver riveted walnut or pear wood handle.  
 This is from an excellent era of knife makng in Thiers, back in the day Abercrombie and Fitch sourced some of the highest quality cutlery and this is a great example of the early Ideal pattern hand forged and hand ground knives, 
 
 Blade has been thinned a little bit as it had begun to get a little thick and handle has a crack on the end, it is super stable and will not be a problem.
