Frequently Asked Questions
Expert advice on professional cutlery and kitchen tool maintenance.
How do I care for my carbon steel knives?
Carbon steel requires hand washing and immediate drying after use. To prevent oxidation or rust, we recommend applying a thin layer of food-grade camellia oil before storage.
Do you offer professional sharpening services?
Yes, we provide expert hand-sharpening services on Japanese whetstones. You can drop off your knives at our physical locations or use our mail-in sharpening service.
What is your return policy on cutlery?
Unused items in their original packaging can be returned within 30 days of purchase. Please note that used knives or items that have been sharpened by the customer are not eligible for return.
How long does shipping take for domestic orders?
Orders are typically processed within 1-2 business days. Standard shipping usually takes 3-7 business days depending on your proximity to our California workshop.
Why does my knife have a 'patina' or blue/grey tint?
A patina is a natural protective layer that forms on carbon steel as it reacts with acidic foods. This is a desirable characteristic that helps protect the blade from actual rust.
Can I put my high-end kitchen knives in the dishwasher?
No. The high heat, harsh detergents, and movement in a dishwasher can chip the blade, warp wood handles, and cause premature dulling. Always hand wash and dry.
